Two Eggs Over Leftover Hash

 I made this sweet potato hash a couple of days ago using leftovers from the previous nights dinner. Now I’m using up the rest of the picked over leftovers to make breakfast this morning. How’s that for stretching ingredients? 😉 🙌🏻
  
Warm it up over medium high heat with a dash of avocado oil while stirring for a couple of minutes.

Crack two pasture raised eggs right over the top. Season with dashes of turmeric, red pepper, black pepper, and sea salt.

  
Cover and reduce heat to low. Cook for an additional couple of minutes, or until eggs are cooked to your preference. I love the “sauce” from over-easy eggs. 

  
Perfection! The sweet potato hash is nice and crispy, and the seasoned eggs add a lovely spice, and pack an excellent anti-inflammatory punch. That’s a great breakfast!
