Mixed Greens and Prosciutto Salad

Would ya just look at all those pretty colors? This right here was my delicious and nutritious side salad creation to compliment our lamb roast for dinner.

I threw this pretty little thing together using all fresh, organic ingredients including spinach and red leaf lettuce, topped with sweet peas, shredded carrots, sliced and seeded cucumbers, prosciutto, grated pecorino Romano cheese, and shredded, locally made horseradish cheddar cheese. Not shown in this picture is the homemade honey Dijon vinaigrette that we drizzled on top.
